Taco Pasta, Yum!

I’ve never been a big fan of boxed dinners when I know I can make it taste better and it will be just as quick! Here’s one such dinner I created years ago and my family absolutely loves it. You can use any type of pasta you like, but we prefer Barilla macaroni noodles best.

  • Barilla macaroni
  • 1.5 lbs. 93% lean ground beef or sirloim
  • 1 packet mild Old El Paso taco seasoning
  • 1 cup shredded sharp cheddar or Mexican cheese
  • Tortilla chips
  • 1 small can tomato sauce]
  • can of Mexican corn
  • can of rinsed and drained beans  if desired
  • taco toppings

Boil the noodles till they are al dente. No one like overcooked noodles!

In separate pan, Brown beef, I always add a small diced onion to the beef because I don’t like the smell of ground beef browning. In also like the taste it gives the meal, but it’s not necessary.

Once browned, drain meat, if necessary, add the taco seasoning and follow the directions but add extra water and tomato sauce. Once done, combine with the drained pasta, add cheese and now thoroughly. Serve with crushed tortilla chips on top! Delicious!
